These are Mine, Nachos
Ingredients
- - 4 oz cherry tomatoes
- - 2 oz black olives
- - 1 bunch green onion
- - 2 Garlic, chopped and mixed with 1 Tbsp of Infused Olive Oil
- - 1 lb Chorizo
- - 4 Tbsp Infused Olive Oil
- - 1 red onion, grilled
- - 1 Cup raw corn
- - 2 limes, zest and Juice
- - 1 Tbsp cumin, cayenne
- - 1 lb pepperjack
Directions
- To begin you will want to preheat your oven to 375 degrees. Once preheated cook chorizo on a sheet pan for 15-20 minutes, or until cooked through. Be sure to reserve oil as it is a nice touch for cooking eggs in the morning.
Once the Chorizo has cooked all of the way remove it from the oven and crumble Chorizo in a bowl and add Medicated olive oil to chorizo. Place chips on a silpat and heat the oven to high. Start with a layer of chips and cheese in the oven for 3-5 minutes. Remove and add toppings. Return to the oven for 4-8 minutes and remove. Add more cheese and toppings and turn on the broiler. Broil for 2-4 minutes while you gather plates and napkins.
