Shroom and Swiss
Ingredients
- - 3 eggs
- - 1 tsp butter
- - 1 tsp Infused Coconut Oil
- - 2 oz portabellinis
- - 1 oz oyster mushrooms
- - 1 shallot, julienned
- - 1 garlic clove
- - 1 Tbsp parsley
- - 1 Tbsp balsamic
Directions
- In an 8 inch non stick add oil and heat to Medium-High. Whip eggs and season with salt and pepper and pour in eggs. You will now start to form the base with a rubber spatula by moving the eggs in a circular pattern in the pan. This is a fairly quick process as you want to give the outside the time to form. After a minute or so, add remaining ingredients and fold in half. Give it a minute to warm through and place on a plate, enjoy!
