Shroom and Swiss


Ingredients


  • - 3 eggs

  • - 1 tsp butter

  • - 1 tsp Infused Coconut Oil

  • - 2 oz portabellinis

  • - 1 oz oyster mushrooms

  • - 1 shallot, julienned

  • - 1 garlic clove

  • - 1 Tbsp parsley

  • - 1 Tbsp balsamic





Directions


  • In an 8 inch non stick add oil and heat to Medium-High. Whip eggs and season with salt and pepper and pour in eggs. You will now start to form the base with a rubber spatula by moving the eggs in a circular pattern in the pan. This is a fairly quick process as you want to give the outside the time to form. After a minute or so, add remaining ingredients and fold in half. Give it a minute to warm through and place on a plate, enjoy!
